Chu Chee Pla (Fried fish in red curry)
Chu Chee is traditional curry sauce  for seafood. such as Fish, prawns and scallops.

Ingredients

  • 2 mackeral  or salmon, Fish filet, prawn, scallops
  • 1 1/2 tsp Red Curry Paste
  • 1/3 cup Coconut milk or milk
  • 1/4 Tsp. Salt
  • 1 Tsp. fish sauce
  • 2 -3 Tsp. sugar
  • 1/3 cup  vegetable oil
  • 3  kaffir lime leaf, finely sliced
  • 3  red chilli, Take of the seed. finely slice

Cooking Method
  1. Clean the fish very well then score the fish at an angle all the way to the bone on both sides.
  2. Sprinkle salt onto the fish on both sides
  3. Heat the oil in a frying pan and fry the fish until golden brown. Don't try to loosen the fish until is done the fish will brake up. Then flip and fly other side until golden brown.  Remove and set it on a plate.
  4. Remove cooking oil from fried fish and leave 1 Tbsp.
  5. Add red curry paste. stirring untill nice smell, About 30-40 Sec.
  6. Add Coconut milk, Fish sauce,Sugar stirring often, simmer for 3 min.
  7. Add fried fish. Coat the fish with coconut milk. Cook for 1-2 min. Remove to serving plate
  8. Garnish with  kaffir lime leaves and sliced chilli.
