Fried fish with tamarind sauce or Pla Rad Prik in Thai. Is a whole fish or fish fillet fried until crispy then covered with a sweet, sour, spicy sauce.


Ingredients
  • 1 Whole Tilapia   (Weigh 1 lb) or  Firm white fish,  or fish fillets
  • 1/4  tsp Salt
  • 1/4 cup . tamarind juice
  • 1-2 Tbsp. palm sugar
  • 2 Tbsp Chopped Garlic
  • 2 Tbsp fresh chilies + dried chilies chopped (Or Depends how  spicy do you like)
  • 2 Tbsp. Fish sauce
  • 3 Tbsp. water
  • 1/2 cup cooking oil
  • Cilantro leaves for garnish
  • big red chilies cut into small strip for garnish


Cooking Method
  1. Clean the fish very well then score the fish at an angle all the way to the bone on both side
  2. Sprinkle salt onto the fish on both side
  3. Heat the oil and fry the fish over low-medium heat until golden brown . Don't try to loosen the fish until is done the fish will brake up. Then flip and fly other side for 5 min for golden brown.  Remove and set it on  a plate.
  4. On medium heat add table spoon of cooking oil from frying the fish.
  5. Add chopped garlic, chopped chilies then stir fry until very nice smell.
  6. Add fish sauce, palm sugar,  tamarind juice, water  mix well and  bring to a boil. If the sauce gets too thick  add more water. The original of sauce should be sweet spicy and sour.
  7. Pour the sauce on top of the fish.
  8. Garnish with big red chili and cilantro leaves
