"Larb Gai" Thai Spicy Chicken Salad
This is one of our all-time favorite Thai dishes, and it is a very common dish. It's quick to make and often extremely spicy, but the lime juice and mint leaves make for an exotic and splendid combination. "Larb or laab" It can be made with beef (larb nuea) or pork (larb moo) instead of chicken

Ingredients:
  • 1 cup  minced chicken
  • 1-2 Tbsp. roasted rice powder (khao koor)
  • 2 Tbsp. ground thai chili / powder (be sure to use real Thai ground chili/powder)
  • 1 1/4 Tbsp. fish sauce
  • 2  tbls. lime juice
  • 1/2 Tsp. sugar
  • 3 Tbsp. finely chopped spring onion and cilantro
  • 3   shallot, sliced
  • 5 Tbsp. chicken stock or water
  • mint leaves for garnish

Cooking Method:
  1. Boiling chicken stock or water
  2. Add minced chicken stir untill done. Trun off the heat.
  3. Add roasted rice powder, ground/powder chili, fish sauce,sugar,lime juice, and mix well
  4. Add sliced shallot, chopped spring green onion and cilantro, mint leaves. and mix well
  5. Remove to severing plate. Serve with fresh cabbage ,green beans, cucumber and steamed sticky rice
