This dish uses fresh herbs like lemon grass, kaffir lime leaves and mint leaves to enhance the flavor. The heat comes from the roasted chili paste and sliced fresh Thai chilies. Phla pla can be made with raw,fried or grilled fish. Either way it is delicious

  • 1 piece Salmon stake about 10-12 oz
  • 1 tablespoon fish sauce
  • 1/2 tablespoon Thai roasted chili paste
  • 5 chilies, sliced or depend how spicy do you like
  • 1/4 cup shallots or red onion, sliced
  • 1 stalk lemongrass, sliced
  • 5-6 kaffir lime leaves, sliced
  • 2-3 tablespoon lime juice or lemon juice
  • 1 Tablespoon sugar
  • 1/4 Teaspoon salt
  • 1 Tablespoon chopped garlic
  • 1/4 cup tempura flour
  • cooking oil for flying
  • some mint leaves and green lettuce leaves

Cooking Method:
  1. sprinkle salt on fish both side
  2. Coat fish in flour both sides.
  3. Heat the cooking oil in a hot pan wait until the oil is hot, Place the fish in medium heat until golden. Flip the fish when the underside is done and fry the other side for even cooking and texture.
  4. In the mixing bowl, Add fish sauce, roasted chili paste, sugar, lemon juice, chopped garlic, and sliced chilies, mix well
  5. Pour the sauce onto the fried fish
  6. Add lemon grass, sliced shallot, Slice kaffir lime leaves, then toss well
  7. Remove to a plate with Green lecture and garnish with mint leaves. Enjoy!!
