Stir Fried Clams with Roasted Chili Paste or Hoi lai pad num prik prao a popular Thai dish of stir-fried clams fried with roasted chili paste and sweet basil . Serve with hot rice.

  • 1 pound fresh Clams, cleaned well
  • 3 tablespoons vegetable oil
  • 1 Handful sweet basil leaves
  • 2 tablespoons roasted chili paste
  • 5 fresh chilies, cut into long strips
  • 3 Glove garlic, finely chopped
  • 1 tablespoon fish sauce
  • 1/2-1 Tsp. Sugar
  • 5-6 Tbsp. evaporated milk or whole milk

Cooking Method
  1. Heat oil in a pan or wok over medium-high heat.
  2. Add garlic in the hot oil and fry until it turning golden brown.
  3. Add clams and stir until they are almost cooked (clams will start to open)
  4. Add roasted chili paste, Milk, fish sauce, sugar and stir until clams are cooked (Now you can see the are open)
  5. Add chili, sweet basil leaves . Stir-fry for another 10 seconds. Transfer to a serving dish and serve with steamed rice.
