Sweet and Sour Fish

  • 1 large whole fresh tilapia fish
  • 1/4 cup carrot sliced
  • 1/4 cup cut pineapple ( can pineapple or fresh pineapple)
  • 1/4 cup sliced bell pepper (any color)
  • 2 cut cherry tomato
  • 1/4 cup cut cucumber
  • 2-3 cup vegetable oil for deep frying
  • 1 tbsp. chopped garlic
  • 1 tbsp. soy sauce
  • 1 tbsp. sugar
  • 1 tbsp. oyster sauce
  • 2 tbsp. tomato sauce (ketchup)
  • 1 tbsp water
  • 2 tsp salt
  • chopped green onion and cilantro for garnish

Cooking Method for fish
  1. Clean the fish and slit it open. Let it stand for few minutes and drain well.
  2. Sprinkle fish with 1 salt all whole fish
  3. Heat the cooking oil in the hot pan wait until the oil is hot enough, deep fry fish in medium heat until golden. Flip the fish when the underside is done and fry the other side for even cooking and texture. Scoop out the fish and drain on paper towel and transfer to serve place set aside

Cooking Method for Sauce
  1. In the same pan, Remove oil but keep 1 tablespoons oil from the pan add garlic stir fly until light brown, add cucumber, carrot stir fly about 2-3 min. add onion, pineapple, bell pepper.
  2. Add soy sauce, ketchup, sugar., oyster sauce ,water stir fly 1-2 min. turn off the heat
  3. Pour the sauce over the fish .Garnish with chopped green onion and cilantro
  4. serve with jasmine rice.
