Tom Yum Koong (Hot and sour soup with shrimps) Tom Yum Koong is the most popular thai soup that is hot, spicy and sour, good for diet and weight loss.

Ingredients:
  • 1 lbs shrimps medium to large size, shelled and de-veined
  • 3 cups Chicken Stock (Or you can used 3 cups of water with 1-2 Chicken bouillon cube)
  • 2 Lemongrass, Thinly Sliced
  • 1/3 cup galangal Root, Sliced
  • 5 Kaffir lime Leaves, Torn in half
  • 5 Fresh Chillies, Crushed
  • 1/2 cup of straw mushrooms drained and rinsed (or plain white mushrooms, oyster mushrooms )
  • 3 Tbsp. Fish Sauce
  • 3-4 Tbs. Lime Juice
  • 1-2 Tbsp. Num prik Pao ( roasted chili paste)
  • 1/3 cup of milk
  • a few spring cilantro Leaves for garnish


Method
  1. Bring chicken stock to boil over high heat in a pot .
  2. Add the lemon grass, galangal, bring it to boil.
  3. Add num prik pao, add mushroom cook for mushroom looks soft. add the shrimp bring it to boil for 2 min.
  4. Add fish sauce,Milk and bring it to boil. Add kaffir lime leave, fresh chilies lime juice cooked for 1 min.
  5. Turn off the heat. Remove to serving plate. springs cilantro for garnish. Serves
