Tom Yum Koong (Hot and sour soup with shrimps) Tom Yum Koong is the most popular thai soup that is hot, spicy and sour, good for diet and weight loss.
1 lbs shrimps medium to large size, shelled and de-veined
3 cups Chicken Stock (Or you can used 3 cups of water with 1-2 Chicken bouillon cube)
2 Lemongrass, Thinly Sliced
1/3 cup galangal Root, Sliced
5 Kaffir lime Leaves, Torn in half
5 Fresh Chillies, Crushed
1/2 cup of straw mushrooms drained and rinsed (or plain white mushrooms, oyster mushrooms )
3 Tbsp. Fish Sauce
3-4 Tbs. Lime Juice
1-2 Tbsp. Num prik Pao ( roasted chili paste)
1/3 cup of milk
a few spring cilantro Leaves for garnish
Bring chicken stock to boil over high heat in a pot .
Add the lemon grass, galangal, bring it to boil.
Add num prik pao, add mushroom cook for mushroom looks soft. add the shrimp bring it to boil for 2 min.
Add fish sauce,Milk and bring it to boil. Add kaffir lime leave, fresh chilies lime juice cooked for 1 min.
Turn off the heat. Remove to serving plate. springs cilantro for garnish. Serves
